  • 1 cup icing sugar
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour and a pinch of salt. Gradually add the dry mixture to the wet ingredients, stirring until a soft dough forms.
  4. Divide the dough in half and roll each portion on a floured surface to about 1/8-inch thickness. Cut into rectangles approximately 3×4 inches.
  5. On one rectangle, place about 1 tsp of strawberry jam in the center, then top with another rectangle, pressing down around the edges to seal.
  6. Bake for 12-15 minutes or until lightly golden brown. Cool before drizzling with icing made from icing sugar mixed with milk.
