  • 1 cup fresh spinach, chopped
  • 4 oz crumbled feta cheese
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tsp olive oil
  • 1/4 cup panko breadcrumbs
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Clean the mushrooms with a damp cloth and remove the stems carefully.
  3. In a skillet over medium heat, heat olive oil and sauté garlic until fragrant. Add chopped spinach and cook until wilted (about 2-3 minutes).
  4. In a bowl, mix sautéed spinach with cream cheese, feta cheese, lemon juice, salt, and pepper until well combined.
  5. Generously stuff each mushroom cap with the filling mixture.
