Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 1 cup jasmine rice
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • 1 lime (juiced)
  • 2 green onions (chopped)
  • 1 tbsp toasted sesame seeds (optional)

Instructions

  1. Rinse the jasmine rice under cold water until clear. Cook in a medium saucepan with equal parts water (1 cup) on medium heat. Bring to boil, then reduce heat and cover for about 15 minutes until tender.
  2. In a small bowl, whisk soy sauce, Sriracha, honey, and lime juice. Marinate the salmon fillets skin-side down in half the marinade for 15 minutes.
  3. Heat oil in a nonstick skillet over medium-high heat. Sear the salmon fillets skin-side down for 4-5 minutes until crispy. Flip and cook for an additional 3-4 minutes.
  4. Fluff the cooked rice and divide it among bowls. Top with seared salmon and drizzle with remaining marinade. Garnish with green onions and sesame seeds.
