  • 1 pound ground beef (or 1 pound crumbled tofu)
  • 2 cups marinara sauce
  • 2 tbsp Sriracha sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup fresh basil leaves (chopped)
  • 2 large eggs
  • ¼ cup green onions (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C). Cook ramen noodles according to package instructions until al dente; drain and set aside.
  2. In a skillet over medium heat, brown ground beef until fully cooked. Drain excess fat, then add marinara sauce and Sriracha; stir until heated through.
  3. In a bowl, mix ricotta cheese with eggs, salt, pepper, and half the basil until creamy.
  4. In a baking dish, layer half of the meat sauce at the bottom. Add half of the ramen noodles followed by half of the ricotta mixture. Repeat layers.
  5. Top with remaining meat sauce and sprinkle shredded mozzarella on top. Bake uncovered for about 25-30 minutes until bubbly and golden brown.
