  • 14 oz firm tofu, pressed and cubed
  • 1/2 cup smoky barbecue sauce
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 8 oz button mushrooms, halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Press the tofu for 15 minutes to remove moisture. Cut into bite-sized cubes.
