- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, grated
- 1 large sweet onion, diced
- 28 oz can fire-roasted tomatoes
- 1 cup full-fat coconut milk
- 2 tbsp tikka masala spice mix
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh cilantro for garnish
- Chop chicken into bite-sized pieces. Dice onion and mince garlic and ginger.
- Optional: Sauté onions in olive oil until golden brown, then add garlic and ginger until fragrant.
- Transfer sautéed mix to the slow cooker; add chicken, tomatoes, coconut milk, and tikka masala spice mix. Stir well.
