  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 large sweet onion, diced
  • 28 oz can fire-roasted tomatoes
  • 1 cup full-fat coconut milk
  • 2 tbsp tikka masala spice mix
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Instructions

  1. Chop chicken into bite-sized pieces. Dice onion and mince garlic and ginger.
  2. Optional: Sauté onions in olive oil until golden brown, then add garlic and ginger until fragrant.
  3. Transfer sautéed mix to the slow cooker; add chicken, tomatoes, coconut milk, and tikka masala spice mix. Stir well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in lemon juice and chopped cilantro.
  6. Serve over rice or with naan bread.
