  • 14 oz canned diced tomatoes (with juice)

Instructions

  1. In a large pot over medium heat, brown the Andouille sausage until crispy. Allow the fats to render out.
  2. Add diced onion, bell peppers, celery, and minced garlic; sauté until softened and fragrant.
  3. Stir in canned tomatoes, Cajun seasoning, bay leaves, and salt. Simmer for about 10 minutes to meld flavors.
  4. Pour in the chicken broth while scraping up any browned bits from the bottom; bring to a gentle boil.
  5. Lower heat and add shrimp and optional okra; cook until shrimp turn pink, approximately 5 minutes.
