  • 1 cup sushi rice
  • 1 cup water
  • 8 oz fresh shiitake mushrooms, sliced
  • 4 nori sheets
  • 1 medium carrot, julienned
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 2 tbsp low-sodium soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • Sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot and cook according to package instructions (about 20 minutes).
  2. Once cooked, season the rice by mixing in rice vinegar and sugar until evenly coated. Let cool slightly.
  3. Heat sesame oil in a pan over medium heat. Sauté sliced shiitake mushrooms until golden brown (about 5 minutes). Set aside.
  4. In a small bowl, whisk together grated ginger, soy sauce, honey/maple syrup, and sesame seeds to create the dipping sauce.
  5. On a bamboo mat, lay out a nori sheet and spread an even layer of sushi rice on it, leaving an inch at the top edge free. Layer sautéed shiitakes and julienned carrots across the center of the rice.
  6. Roll tightly from the bottom using the bamboo mat while ensuring fillings stay intact. Seal the edge with water if needed. Repeat with remaining sheets and ingredients.
