  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar

  • 1 1/2 cups graham cracker crumbs

  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared pan and bake for about 10 minutes.
  3. In another bowl, beat softened cream cheese and granulated sugar until smooth. Add pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, and ginger; mix until fluffy.
  4. Pour the filling over the baked crust and smooth with a spatula. Bake for an additional 30-35 minutes until slightly jiggly in the center.
  5. Allow cooling completely at room temperature before chilling in the fridge for at least two hours. Cut into squares and serve.
