  • 1 cup canned pumpkin puree
  • 2 large eggs, room temperature
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually add pumpkin puree, mixing until combined. Add eggs one at a time along with cinnamon; blend well.
  4. Pour the pumpkin cheesecake filling over the crust and spread evenly with a spatula.
  5. Bake for 25-30 minutes until set but slightly jiggly in the center. Allow to cool at room temperature before chilling in the fridge for at least two hours.
  6. Lift bars from the pan using parchment paper edges, cut into squares, and serve.
