Instructions

  1. Prepare the marinade by combining pineapple juice, soy sauce, garlic, brown sugar, bay leaves, and peppercorns in a bowl. Mix well.
  2. Place pork shoulder in a resealable bag and pour the marinade over it. Ensure it's fully coated and marinate in the fridge for at least 4 hours or overnight.
  3. Heat oil in a skillet over medium-high heat. Sear the marinated pork on all sides until golden brown.
  4. Transfer the seared pork to a slow cooker or pot, add sliced onions and leftover marinade. Cook on low for about 8 hours or simmer covered on the stovetop at 325°F for approximately 3 hours until tender.
