  • 1 cup graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 1/2 cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs with melted butter and 2 tbsp sugar. Mix well and press firmly into the bottom of cupcake liners in a muffin tin.
  2. 2. In another bowl, beat cream cheese until smooth. Add sour cream, remaining sugar (1/4 cup), and vanilla extract; mix until creamy and well combined.
  3. 3. Spoon the cheesecake mixture over each crust until about three-quarters full.
  4. 4. Bake for 15-20 minutes until set but still slightly jiggly in the center. Allow to cool at room temperature before refrigerating for at least two hours.
  5. 5. Once chilled, carefully remove from liners and top each mini cheesecake with sliced strawberries and blueberries.
