  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a jelly roll pan lined with parchment paper.
  2. In a bowl, whisk eggs and sugar until pale and fluffy (about 5 minutes).
  3. Sift together flour and cocoa powder, then gently fold into the egg mixture.
  4. Pour batter into the pan and bake for 12-15 minutes until springy.
  5. While cooling, heat heavy cream until simmering, pour over chopped chocolate, let sit for five minutes, then stir until smooth.
  6. Once cake is slightly cool, invert onto a powdered sugar-dusted towel, spread ganache on top, roll tightly using the towel as support, then wrap in plastic wrap.
  7. Chill for at least an hour before decorating with remaining ganache or whipped cream and garnishing with pine nuts.
