  • 34 lbs beef chuck roast
  • 1 medium yellow onion, sliced
  • 6 cloves garlic, minced
  • 3 large carrots, chopped
  • 3 medium Yukon Gold potatoes, quartered
  • 2 cups low-sodium beef broth
  • 1 cup red wine
  • 2 tbsp Worcestershire sauce

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Slice the onion and chop the carrots and potatoes.
  3. In a large oven-safe pot or Dutch oven, heat oil over medium-high heat. Sear the chuck roast on all sides until golden brown (about 4 minutes per side).
  4. Add onions and garlic to the pot; sauté until softened (about 2 minutes). Deglaze with red wine, scraping the bottom of the pot.
  5. Pour in beef broth and Worcestershire sauce, then add chopped vegetables.
  6. Bring to a simmer, cover with a lid, and transfer to the oven. Cook for about 3 hours or until the meat is tender and shreds easily.
