Ingredients

Scale
  • 4 cups russet potatoes, peeled and diced
  • 6 slices thick-cut bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1/4 cup chopped green onions for garnish

Instructions

  1. In a large pot over medium heat, cook the bacon until crispy (5-7 minutes). Remove but keep the grease.
  2. Add onions to the pot and sauté until translucent (3-4 minutes). Stir in minced garlic for another minute.
  3. Add diced potatoes and chicken broth; bring to a simmer. Cover and cook until potatoes are fork-tender (15-20 minutes).
  4. Use an immersion blender to blend the soup to a creamy consistency, leaving some chunks if desired. Stir in heavy cream.
  5. Return cooked bacon to the pot and stir in half of the cheddar cheese until melted. Serve hot with remaining cheese and green onions on top.

Nutrition

Keywords: For added flavor, consider mixing in fresh herbs like thyme or rosemary. You can substitute russet potatoes with Yukon golds or add vegetables like broccoli for extra nutrition. For an even creamier texture, use half-and-half instead of heavy cream.
