Instructions

  1. In a large pot over medium heat, warm the chicken broth until simmering.
  2. Add sliced mushrooms and grated ginger; cook for about 5 minutes until mushrooms soften.
  3. Gently stir in cubed tofu and cook for an additional 3-4 minutes.
  4. Mix in soy sauce, rice vinegar, and chili paste to taste.
  5. Gradually add the cornstarch slurry while stirring continuously to thicken the soup.
  6. Remove from heat and drizzle with sesame oil; garnish with chopped green onions before serving.
