  • 10 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped

  • 1 lemon, halved
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper until a paste forms.
  4. Loosen the skin over the chicken breast; rub half of the herb mixture underneath and the rest on the outside.
  5. Place one lemon half inside the chicken cavity; squeeze juice from the other half over the top.
  6. Roast in a pan for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before carving.
