Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, peeled and sliced
  • 2 cups jasmine rice, rinsed
  • 4 cups chicken broth (homemade or low-sodium)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • Fresh cilantro and green onions for garnish

Instructions

  1. In a large pot, combine chicken breasts and enough water to cover them completely. Bring to a gentle boil over medium heat.
  2. Skim off any foam that rises to the surface, then add sliced ginger and smashed garlic. Simmer for about 30 minutes until the chicken is tender.
  3. Remove the chicken from the pot and strain 1 cup of broth into another saucepan. Add rinsed jasmine rice and an equal amount of water; bring to a boil.
  4. Lower the heat, cover tightly, and cook for about 15 minutes until the rice absorbs all the liquid. Fluff with a fork.
  5. Mix soy sauce and sesame oil in a small bowl; drizzle over sliced chicken before serving.
