  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tsp dried oregano
  • 4 cloves minced garlic
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated
  • 2 tbsp fresh dill or 1 tbsp dried dill
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by whisking together olive oil, lemon juice, oregano, garlic, salt, and pepper in a bowl. Place chicken in a resealable bag or dish, pour marinade over it, seal tightly, and refrigerate for at least 1 hour (preferably overnight).
  2. Preheat your grill to medium-high heat (375°F /190°C).
  3. Remove chicken from marinade (reserve marinade) and grill for about 5-7 minutes on each side until cooked through (internal temperature of 165°F /75°C) and grill marks appear.
  4. While chicken is grilling, mix yogurt, grated cucumber, dill, lemon juice, salt, and pepper in a bowl until well combined.
  5. Serve grilled chicken on plates drizzled with reserved marinade alongside the yogurt sauce.
