  • 2 pounds baby back ribs
  • 3 tablespoons gochujang
  • 1/2 cup pure maple syrup
  • 1 teaspoon garlic powder
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste
  • For the Rub: 1/4 cup brown sugar
  • 2 teaspoons smoked paprika

Instructions

  1. Preheat your smoker to 225°F (107°C). Remove the silver skin from the back of the ribs and pat dry.
  2. In a bowl, mix brown sugar, smoked paprika, salt, and pepper to create a rub. Generously coat both sides of the ribs.
  3. In another bowl, whisk together gochujang, maple syrup, apple cider vinegar, salt, and pepper for the glaze.
  4. Smoke the ribs bone-side down for about 3 hours until tender.
  5. Brush on the glaze during the last half hour of smoking, repeating every ten minutes until they are caramelized.
  6. Serve hot with extra glaze drizzled on top.
