  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • Zest and juice of 2 medium lemons
  • 8 oz spaghetti or linguine
  • 6 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Chop garlic and parsley; season chicken with salt and pepper.
  2. In a large pot, boil salted water, add pasta, and cook until al dente. Reserve 1 cup of pasta water before draining.
  3. In a skillet over medium heat, heat olive oil with half the butter. Cook chicken breasts for about 6 minutes per side until golden brown. Remove from skillet and let rest.
  4. In the same skillet, melt remaining butter with minced garlic over low heat for about 1 minute until fragrant. Add lemon juice and zest.
  5. Slice the chicken; return it to the skillet along with drained pasta. Toss everything together, adding reserved pasta water as needed for creaminess.
  6. Plate generously and top with grated Parmesan cheese and fresh parsley.
