Instructions

  1. Peel and quarter the Yukon Gold potatoes. Boil in salted water for 15-20 minutes until fork-tender.
  2. Drain and return potatoes to the pot over low heat for 1 minute to dry.
  3. Mash until smooth; then stir in butter and cream until well combined.
  4. Incorporate egg yolks, salt, pepper, and nutmeg (if using) into the mixture.
  5. Preheat oven to 400°F (200°C). Pipe or spoon potato mixture onto a lined baking sheet.
