  • 3 lbs chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion, chopped
  • 6 garlic cloves
  • 2 tsp cumin powder
  • 1 tsp oregano
  • 3 cups beef broth
  • 12 soft corn tortillas

Instructions

  1. Remove stems and seeds from guajillo chiles. Toast in a pan over medium heat for 2 minutes, then soak in hot water for 15 minutes.
  2. In a blender, combine soaked chiles, garlic, onion, cumin, oregano, and 1 cup beef broth. Blend until smooth.
  3. Sear the chuck roast in a skillet over medium-high heat until browned on both sides.
  4. Place the roast in the crock pot and pour the blended sauce over it with the remaining beef broth. Stir to combine.
  5. Cook on low for 8 hours or high for 4 hours until meat is fork-tender.
  6. Shred the meat inside the pot and serve in warm corn tortillas with chopped onions and cilantro.
