Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oats, chopped almonds, dried cranberries, and orange zest until evenly combined.
  3. In another bowl, whisk together the melted coconut oil and honey or maple syrup until smooth. Pour into the dry mixture and stir well.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet, pressing each mound slightly to form even bites.
  5. Bake for 15-20 minutes until golden brown around the edges. Allow to cool for 10 minutes before transferring to a wire rack.
