Ingredients

Scale
  • 2 lbs bone-in chicken thighs (skin-on recommended)
  • 1 large sweet onion (finely sliced)
  • 45 garlic cloves (minced)
  • 1 tsp ground cinnamon
  • 2 tsp cumin
  • 1 cup low-sodium chicken broth
  • 1 cup dried apricots (roughly chopped)
  • ½ cup toasted almonds (for garnish)

Instructions

  1. Prepare your ingredients by slicing the onions and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken thighs skin-side down until golden brown, about 5 minutes per side. Remove from the pan.
  3. In the same skillet, add onions and garlic; cook until soft (about 5 minutes).
  4. Stir in cinnamon and cumin, allowing them to bloom for about a minute.
  5. Return the chicken to the pan with dried apricots and pour in chicken broth. Simmer gently for 30-40 minutes until the chicken is tender.
  6. Before serving, stir in toasted almonds and drizzle with sauce.
