  • 1/2 cup unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 cup seasoned flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the softened butter with minced garlic, parsley, lemon juice, salt, and pepper until well combined.
  3. Place each chicken breast between two sheets of plastic wrap and gently pound to an even thickness.
  4. Spoon the herb butter mixture into the center of each chicken breast, fold in the sides, and roll tightly.
  5. Set up a breading station with seasoned flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Dredge each chicken roll in flour, dip in egg wash, then coat with breadcrumbs.
  6. Arrange on the baking sheet and bake for 25-30 minutes until golden brown and cooked through. Let rest for 5 minutes before serving.
