  • 1 lb boneless chicken thighs
  • 1 cup basmati rice
  • 2 medium onions, thinly sliced
  • 2 ripe tomatoes, chopped
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 4 cardamom pods
  • 1 small cinnamon stick
  • 2 bay leaves
  • Salt to taste
  • 3 tbsp oil or ghee
  • Water as needed

Instructions

  1. Marinate the chicken with yogurt, ginger-garlic paste, cumin seeds, salt, turmeric powder, and garam masala in a bowl. Let it sit for at least 1 hour.
  2. Rinse the basmati rice under cold water until clear. Soak for 30 minutes.
  3. In a heavy pot, heat oil or ghee over medium heat. Cook sliced onions until golden brown.
  4. Add chopped tomatoes and marinated chicken to the pot; cook until the chicken is no longer pink.
  5. Layer the soaked rice over the chicken without stirring too much. Pour enough water to cover by an inch and add bay leaves and cinnamon stick.
  6. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 25-30 minutes.
