  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. Dice chicken breasts into bite-sized pieces. In a skillet over medium heat, add olive oil and sauté chicken until golden brown (5-7 minutes). Season with salt, pepper, and dried herbs.
  3. Meanwhile, boil spaghetti according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  4. In the same skillet with the chicken, lower heat and add minced garlic; sauté until fragrant. Mix in cream cheese and half of the shredded cheeses until melted.
  5. Stir in reserved pasta water until desired consistency is reached. Add cooked spaghetti and chicken; mix well.
  6. Transfer mixture to the baking dish, top with remaining shredded cheese, and bake for about 20 minutes until bubbly and golden.
