  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups aged Gruyère cheese, shredded
  • 1 cup heavy cream
  • 2 medium onions, thinly sliced
  • 2 tbsp fresh thyme leaves
  • 3 tbsp unsalted butter (for greasing and cooking)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. In a skillet over medium heat, melt 1 tablespoon of butter and add the sliced onions. Cook until caramelised (about 20 minutes), stirring occasionally.
  4. Layer half of the potato slices in the prepared dish. Sprinkle with salt, pepper, half of the caramelised onions, half of the Gruyère cheese, and half of the thyme.
  5. Repeat the layering process with the remaining ingredients.
  6. Pour heavy cream over the top until just covering the potatoes.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20-30 minutes until golden brown and bubbly.
  8. Let cool for 10 minutes before serving.
