  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup buffalo sauce
  • 1 cup ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • 9 no-boil lasagna noodles
  • 1 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Season chicken with salt and pepper, then cook in a skillet over medium heat until no longer pink. Shred chicken using two forks.
  3. In a bowl, mix shredded chicken with buffalo sauce and ricotta cheese until well coated.
  4. Spread diced tomatoes on the bottom of the baking dish. Layer noodles, half of the chicken mixture, and mozzarella cheese. Repeat layers, finishing with noodles and remaining mozzarella.
  5. Cover tightly with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
  6. Let cool slightly before slicing into squares.
