  • 8 corn tortillas
  • 2 cups shredded Oaxaca cheese or mozzarella
  • Lime wedges (for serving)

Instructions

  1. In a large pot, combine diced beef chuck roast, chopped onion, minced garlic, and dried guajillo chiles. Cover with water and bring to a boil. Simmer for 2-3 hours until the meat is tender.
  2. Remove the meat and strain the broth. Blend the guajillo chiles with some broth until smooth to create the sauce.
  3. Shred the beef using two forks and mix it with the blended sauce.
  4. Heat a skillet over medium heat. Place one tortilla in the pan, add shredded cheese and beef mixture on top, then cover with another tortilla.
  5. Cook each side until golden brown and crispy (about 3-4 minutes per side). Serve hot with lime wedges and chopped cilantro.
