  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup BBQ sauce (homemade or your favorite brand)
  • 1 cup whole milk
  • 2 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake on a foil-lined baking sheet for 25-30 minutes until cooked through (internal temperature of 165°F).
  2. Meanwhile, cook elbow macaroni in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a saucepan over medium heat, melt butter. Whisk in flour until combined. Gradually add milk while whisking until thickened. Stir in cheddar cheese until melted.
  4. Add BBQ sauce and smoked paprika to the cheese sauce; mix well.
  5. Chop baked chicken into bite-sized pieces and fold into the pasta and cheese mixture until fully coated.
