  • 4 medium russet potatoes
  • 2 cups cooked BBQ beef (shredded)
  • 1 cup sharp cheddar cheese (shredded)

  • 4 tbsp unsalted butter
  • 3 green onions (chopped)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup barbecue sauce

Instructions

  1. Preheat oven to 400°F (200°C). Wash potatoes and poke holes in them with a fork. Bake directly on the oven rack for 45-60 minutes until fork-tender.
  2. Allow potatoes to cool slightly, then cut in half lengthwise and scoop out the insides into a mixing bowl, leaving enough flesh in the skins.
  3. Add BBQ beef, cheddar cheese, sour cream, butter, garlic powder, salt, pepper, and barbecue sauce to the bowl. Mix until well combined.
  4. Spoon the mixture back into potato skins generously and top with more cheddar if desired. Place on a baking sheet and return to the oven for an additional 15-20 minutes until heated through.
  5. Garnish with chopped green onions before serving.
