Ingredients

Scale
  • 4 bone-in pork chops (1 inch thick)
  • 4 slices of good quality bacon, chopped
  • 1 cup fresh mushrooms (button or cremini), sliced
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp olive oil
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the mushrooms and onions; slice bacon into small pieces.
  2. Heat olive oil in a large skillet over medium-high heat. Season pork chops with salt and pepper; sear for 4-5 minutes on each side until golden brown. Remove from skillet and keep warm.
  3. In the same skillet, add chopped bacon and cook until crispy. Remove excess fat if necessary.
  4. Add onions and mushrooms to the skillet; sauté until onions are translucent (about 5-7 minutes).
  5. Pour in chicken broth, scraping up any browned bits from the pan. Stir in thyme and simmer for 2-3 minutes.
  6. Return pork chops to the skillet; spoon sauce over them and cover. Simmer on low heat for 10-15 minutes until fully cooked.
