  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, sliced into rounds
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, soy sauce, honey, lemon juice, garlic powder, salt, and pepper to create the marinade.
  2. Place beef cubes in a resealable bag or bowl and pour half of the marinade over the beef. Seal and refrigerate for at least one hour (or overnight).
  3. While the beef marinates, wash and chop the vegetables into bite-sized pieces.
  4. Preheat your grill to medium-high heat (about 400°F). If using wooden skewers, soak them in water for about 30 minutes.
  5. Thread the marinated beef and chopped vegetables onto skewers alternately.
  6. Grill skewers for about 8 to 10 minutes, turning occasionally until desired doneness is reached (medium rare is around 135°F).
