  • 2 medium aubergines (about 500g), cut into bite-sized pieces
  • 4 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Wash the aubergines and cut them into uniform pieces.
  2. In a bowl, combine olive oil, garlic, lemon juice, smoked paprika, cumin, salt, and pepper.
  3. Add the aubergine pieces to the marinade and toss until coated. Let marinate for at least 30 minutes.
  4. Skewer the marinated aubergines onto skewers with space between each piece.
  5. Preheat the grill to medium-high heat (400°F/200°C) and grill the skewers for about 5-7 minutes on each side until charred and tender.
  6. Serve hot with fresh herbs or yogurt sauce if desired.
