- 1/2 cup unsalted butter (cold)
- 1/4 cup granulated sugar
- 1 large egg
- 1 cup whole milk
- 1/2 cup pure maple syrup
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- 1/4 tsp salt
- 3/4 cup granulated sugar (for caramel)
- Preheat oven to 350°F (175°C). In a bowl, mix flour, cold butter, and sugar until crumbly. Press into muffin tins.
- Bake shells for about 15 minutes until golden brown.
- In a separate bowl, whisk eggs, milk, maple syrup, vanilla, cornstarch, and salt until smooth.
- Pour custard into cooled shells and bake at 325°F (160°C) for 20-25 minutes until slightly jiggly in the center.
- For caramel, melt sugar over medium heat until amber. Drizzle over cooled tartlets.
- Chill for at least 2 hours before serving.
