  • 2 tsp fresh thyme leaves
  • 2 tsp fresh rosemary, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (165°C). In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper and sear until browned on all sides (about 4-5 minutes per side). Remove shanks and set aside.
  2. In the same pot, add onions and carrots; cook until softened (about 5 minutes). Stir in garlic, thyme, and rosemary until fragrant (about 1 minute).
  3. Pour in the Guinness stout to deglaze the pot, scraping up any brown bits. Bring to a simmer for about 2-3 minutes.
  4. Return the lamb shanks to the pot along with beef broth until it covers two-thirds of the meat. Bring back to a simmer, cover tightly with a lid, and transfer to the oven.
  5. Braise for about 2-2.5 hours or until fork-tender.
