Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan to form a crust.
  2. Bake crust for 8-10 minutes until golden brown. Allow to cool completely.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy.
  4. Add eggs one at a time, incorporating fully before adding the next. Fold in sour cream, eggnog, nutmeg, and vanilla extract until well combined.
  5. Pour cheesecake filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes until just set with a slight jiggle in the center.
  6. Turn off oven and let cheesecake cool inside with the door ajar.
  7. Prepare caramel sauce while cheesecake cools; drizzle over slices before serving.
