- 1 cup green or brown lentils
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups low-sodium vegetable broth
- 2 cups fresh spinach or kale
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- Prepare your ingredients: chop the onions, dice the carrots and celery, and mince the garlic.
