Ingredients

Scale
  • 12 oz penne pasta
  • 1 lb Italian sausage (sweet or spicy)
  • 1 medium butternut squash (peeled, seeded, and cubed)
  • 2 cups fresh spinach
  • 3 cloves garlic (minced)
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread the cubed butternut squash on the baking sheet. Drizzle with olive oil, season with salt and pepper, and roast for about 25 minutes until tender.
  3. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet over medium heat, brown the Italian sausage (remove casings first), breaking it apart as it cooks for 5-7 minutes. Add minced garlic in the last minute to avoid burning.
  5. Combine roasted butternut squash, cooked pasta, fresh spinach, heavy cream, Italian seasoning, salt, and pepper into the skillet with the sausage. Stir gently over low heat until heated through.
  6. Serve warm in bowls or plates. Optionally top with Parmesan cheese.
