Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and salt until smooth. Let the batter rest for about 30 minutes.
  2. Heat a non-stick skillet over medium heat and lightly grease it if desired.
  3. Pour about 1/4 cup of batter into the skillet and tilt to spread evenly. Cook until edges lift and turn golden brown (about one minute), then flip and cook for another minute.
  4. Once cooked, layer sliced strawberries on one half of each crepe. Optionally sprinkle with more sugar.
  5. Top with whipped cream and fold each crepe over like a taco. Drizzle with additional whipped cream if desired.
