  • 1 cup fonio
  • 2 cups water or vegetable broth
  • 3/4 cup crumbled feta cheese
  • 1/2 cup pitted olives (green or black)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (diced)
  • 1/2 cup fresh parsley (chopped)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse fonio under cold water. In a saucepan, combine fonio and water (or broth) and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes until the liquid is absorbed. Fluff with a fork.
  2. While fonio cooks, prepare vegetables: chop cherry tomatoes and dice cucumber.
  3. In a large bowl, mix cooked fonio with tomatoes, cucumber, olives, feta, and parsley.
  4. Squeeze lemon juice over the mixture and season with salt and pepper. Toss gently to combine.
  5. Serve immediately in individual bowls or plates.
