Instructions

  1. Preheat oven to 350°F (175°C) and grease a lamb-shaped baking pan.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together cake flour and baking powder. Gradually add to wet ingredients, alternating with milk until smooth.
  5. Fill the prepared pan with the batter just below the rim.
  6. Bake for 30-35 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
  7. For frosting, whip together powdered sugar and milk until fluffy; frost the cooled cake and decorate with coconut flakes if desired.
