  • 9 lasagna noodles (regular or no-boil)
  • 1 cup ricotta cheese (whole milk)
  • 1 ½ cups shredded mozzarella cheese (divided)
  • 1 cup thick-cut pepperoni slices
  • 2 cups marinara sauce
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick cooking spray.
  2. Cook the lasagna noodles in boiling salted water until al dente, then lay them flat on parchment paper.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, salt, and pepper. Stir in half of the pepperoni slices.
  4. Spread two tablespoons of the cheese mixture onto each noodle, add more pepperoni, and roll up tightly.
  5. Spread a layer of marinara sauce in the baking dish, place the rolled noodles seam-side down, cover with remaining sauce, mozzarella, and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
