  • 2 cups low-sodium vegetable broth

  • 1 tbsp toasted sesame oil
  • 2 tbsp olive oil
  • 2 green onions (chopped)
  • 2 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 2 eggs (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and grated ginger; sauté until fragrant.
  2. Add broccoli and julienned carrots; cook for about 3-4 minutes until tender-crisp.
  3. Stir in rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover tightly. Cook for 15-20 minutes until quinoa absorbs most of the liquid.
  4. Stir in soy sauce and sesame oil until well combined.
  5. If using eggs, push quinoa mixture to one side and scramble beaten eggs on the other side until fully cooked, then mix together.
  6. Fold in chopped green onions just before serving.
