Ingredients

Scale
  • 4 medium Yukon Gold potatoes (about 1.5 lbs), peeled and diced
  • 1 cup sharp cheddar cheese, shredded
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the diced onions until softened (about 5 minutes). Add minced garlic and cook for an additional minute.
  2. Stir in the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 15-20 minutes until potatoes are tender.
  3. Blend the mixture using an immersion blender until smooth (or blend in batches in a regular blender). For a chunkier texture, blend only half.
  4. Return the pot to low heat; stir in heavy cream and shredded cheddar cheese until melted and creamy.
  5. Season with thyme leaves, salt, and pepper to taste. Serve hot, garnished with chopped parsley.
