  • 1 cup long-grain white rice
  • 4 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Spray the slow cooker with nonstick cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker. Season with garlic powder, paprika, thyme, salt, and pepper.
  3. Add the rice evenly over the chicken.
  4. Pour the chicken broth over all ingredients.
  5. Scatter the carrots and peas on top.
  6. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender.
  7. Shred the chicken in the slow cooker using two forks and stir before serving.
