  • 4 medium sweet potatoes (about 2 lbs)
  • 1 cup sharp cheddar cheese, shredded
  • 6 slices thick-cut bacon, chopped
  • 1/2 cup full-fat sour cream
  • 2 tbsp unsalted butter
  • 2 tbsp fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke holes in each with a fork. Bake for 45-50 minutes until tender.
  2. Chop bacon and fry in a skillet over medium heat until crispy. Drain on paper towels.
  3. Once sweet potatoes are cool, slice in half lengthwise and scoop out flesh into a bowl. Mix in butter, sour cream, half of the cheddar cheese, salt, pepper, and half of the bacon until creamy.
  4. Spoon filling back into potato skins and top with remaining cheese and bacon bits.
  5. Return stuffed potatoes to oven at 375°F (190°C) for another 20 minutes until golden.
  6. Garnish with fresh chives before serving.
